Pommes Persillade or Potatoes with persillade are a quick and easy to prepare great accompaniment to many dishes. They go really well with a roast dinner and can liven up simple fish dishes.
Ready in around 1hr they are very simple to prepare.
Ingredients for 2 People
500g New Potatoes.
2 Cloves of Garlic
A handful of Parsley
2tbsp Olive Oil
Pre heat your oven to about 200C/fan 180C/gas 6. Put the Olive Oil in a large oven proof dish to warm up for about 5 minutes.
Wash the Potatoes. I prefer to use new potatoes as they are soft enough you don’t need to boil them before roasting.
Make up a Persillade with the Garlic and Parsley. Toss the Potatoes in the Persillade and add to the heated oil. They should sizzle as you tip them in. Stir them about in the oil to make sure they are coated.
Cook for about 1hr turning occasionally to make sure they are roasted evenly.
