Just a very quick post today as its been a busy day and I have to acknowledge the Chef de Jour Hana for cooking one of my favourite meals. Though I haven’t cooked today I am busy trying to think up ideas for a food writing competition, submitting a recipe for four people with a budget £5 total! Not an easy one to do. I can think of plenty of recipes which could be made for just a fiver…but… thinking of one which is interesting (and not a pasta bake/ stew/ curry) and good enough to win a competition? That’s the hard bit.
I am on a roll with a good exercise week last week, hitting the gym everyday and taking some nice walks out and about in West London. So along with today’s recipe here are some photos from my walk across Ealing Common in London last week.
Asian Citrus Salmon for two, I should mention the recipe is from the cook book, ‘ You are what you eat’.
2 Chunky salmon steaks
4tbsp Soy Sauce
2cm Piece of ginger -grated
2 Garlic cloves – finely chopped
4 Spring onions
1 Orange – juice and grated peal
Rice and Veg to serve (we had baby corn and peas)
Mix the Soy sauce, orange zest and juice, ginger, garlic and spring onions in a shallow oven-proof dish. Pop the salmon in and coat it in the marinade. Cover with cling film and pop in the fridge for 30-40 minutes to allow the flavours to penetrate the salmon.
Remove from the fridge and discard the cling film. Bake in the oven at 200c/gas mark 6
Serve with long grain rice and what ever veggies you have in the fridge.
