We are off on holiday to Greece in a month and I have been furiously trying to trim down a bit, too look my best for the holiday photos. With the sun shinning and clear blue skies over London today, it feels so much closer now than we we started planning in January. I can’t wait to land in Athens and begin exploring the city and all the ancient sites in and around Athens. Its going to be very interesting seeing the mix of modern and new. I love Greek mythology, even though my memory of it is a little sketchy!
What I am really looking forward to is a week on Santorini in the Agean sea. The pictures look gorgeous with beautiful beaches to lay on and little towns high on the hill to wander around. So with a week of sunbathing around the courner and lots of holiday snaps its time for packed lunches like these,
Sliced Beef and cottage cheese salad.
1/2 a lettuce
40g of watercress
5 cherry tomatoes, halved
1/4 of a cucumber, diced
6oz beef steak. Cooked to your liking.
2tbsp cottage cheese
1 tsp pepper
1 tsp corriander
To Cook the steak, heat the olive oil with the pepper and corriander in a pan. Coat the steak in the herbs as this will add flavour to your salad. Fry on both sides till cooked to your liking, if your me thats medium rare. Leave to cool.
Wash all your salad ingredients first. I make mine straight into a packed lunch box (an old ice cream tub).
Mix all the salad ingredients together in the box then slice the beef thinly and pop on top. Spoon on the cottage cheese and you have a tasty, healthy lunch!
