Gigantes Plaki ~ Butter bean stew in the oven.

This is the vegetarian recipe I made for people at my 30th birthday party. Cooking for your own birthday party! Some may think its strange but I love cooking and for me its a lot of fun to cook for a load of people! I ended up eating more of this than the meaty lamb pasta even though it had the dreaded chick pea in it (chick peas are my least favorite food, and decidedly evil in my opinion).

Gigantes Plaki (Tomato and bean stew) serves 4 – 6 with rice.


400g can butter beans

400g can chick peas

good glug of olive oil

1 large Spanish onion, finely chopped

2 cloves of Garlic, crushed and chopped

2 400g cans of chopped tomatoes

2tbsp tomato puree

1tsp sugar

1tsp oregano

1tsp cinnamon

chopped parsley to serve


Preheat your oven to 180c/160c fan/Gas 5

In a big saucepan heat the the olive oil and tip in the chopped onion and garlic. Cook over a medium heat for 10 minutes until the onion and garlic are soft and golden but not browned.

Add the tomato puree, stir in and cook for a minute before adding the remaining ingredients (chopped tomatoes, oregano, cinnamon, butter beans and chick peas). Bring to the boil then simmer uncovered for 5 minutes.

Tip into a large oven proof dish and bake in the oven for 1hr ~ 1hr 20mins depending on your oven.

When ready to serve scatter with the parsley and drizzle with a little olive oil.

I think this goes well with either rice or crusty bread, yumy.
