Garlic dip

This is a very quick garlic dip. Its not for the feint of heart as it does pack a punch. Less a recipe for a romantic evening, more for if your going to be out hunting vampires. I made it to go with the Lamb with courgettes and tomatoes dish I made the other day. It’s nice with some warm crusty bread and would also go very well with raw vegetables. Yum.

Garlic dip

Ingredients – Makes enough for 4 people to share as part of a salad or meze. 

  • 70g almonds, ideally crushed already
  • 3tbsp ready made breadcrumbs
  • 4 large cloves of garlic
  • juice of 1 lemon
  • 100ml olive oil (you may need more or less oil)
  • 4tbsp hot water


You will need a blender or food processor for this one. In the blender add thealmonds and if not already crushed give them a quick pulse. Add the breadcrumbs, garlic, juice of a lemon and blitz everything together. Whilst the machine is running pour in the olive oil till you have a smooth and thick mixture. Keep whizzing and pour the water in till it gets to the desired consistency.

You may need to play around with the amounts of liquid to get the thickness you want. I like think dips so I added slightly less oil and water but you can add more to get it how you like.

Serve with crusty bread or warmed pitta and some raw vegetables.
