I’ve been having a good run of manly food the last week or so. Before we went out and had the best burger in a long time we had one of the most ridiculously rich, manly meals I could possibly imagine! Hana made us what you can only describe as proper man food, a “Buffalo Chicken Macaroni and Cheese”, with 3 kinds of cheese, three! Hana found the recipe on what has become one our favourite food blogs to read (other than this one of course!) The Girl Who Ate Everything by Christy. It’s a really good blog with some great recipes. The Buffalo Macaroni and Cheese recipe is the second recipe we have cooked from Christy’s blog, the first was the really tasty shrimp enchiladas we made for a Mexican themed dinner party back at the start of January.

Hana made a few changes to the original recipe for Buffalo Macaroni and Cheese which you can find here. The recipe uses quite a lot of butter which we thought was a bit much for us. Though you need it in the white sauce Hana replaced it with olive oil when frying the onion, celery, garlic and chicken in step 2 of the recipe.

Whilst we were lucky enough to find pepper cheese in the shops here (in the UK) but, I couldn’t get “buffalo wing sauce”. So I made a substitution and used a sachet of BBQ sauce instead. I think this worked just as well, anyway we were really happy with the end result. Instead of using “Panko breadcrumbs” we also used normal breadcrumbs made in the food processer at home.

Though we made a few changes here and there (a bit less cheddar) I think this was a really nice meal, perfect for a cold winters evening with a glass of wine and snuggling up on the sofa. This was such an indulgent dinner, not the sort of thing you can have every day, but we both really enjoyed having it and there was more than enough left over to have some more the next day!
