Perfect roast potatoes
This is a very quick recipe post for how to make the perfect roast potatoes. The recipe came from the ever lovely Hana, who does seem to have been doing a lot of the recipes lately….maybe I need to call this Hana’s kitchen? Or start Hana’s corner with her own recipes? Well, that is a thought for another day. In the meantime let’s look at her perfect roast potatoes.
The recipe is one which Hana put together from what was in the cupboards to go with the sausage tray bake we had last week (get the full recipe here) but they would work with any roast dinner or even with a lighter dish, think on the side of a nice fillet of your favourite fish with some green beans.
Makes 2 -3 servings – adjust to how many people you are preparing this for.
Cooking time 1 hour
Rustic roast potatoes
2-4 tbsp vegetable oil
500g New potatoes
handful of cloves of Garlic
4 sprigs of fresh thyme and 2 sprigs of fresh rosemary
Salt and pepper to taste.
Preheat your oven to 180c and place the oil in an oven to warm up.
Wash the potatoes the herbs then leave to drain. Bash the garlic cloves breaking the skin.
When the oil is hot remove the pan and add the potatoes, garlic and herbs. Turn the potatoes in the oil to coat and season with salt and pepper to taste. Roast in the centre of the oven for around 50 minutes.
